Moroccan Chicken with Couscous – Protein for Muscle

This simple recipe provides a good healthy protein punch to help muscle recovery and growth. Also the garlic, chillies, chick peas and apricots provide a good balance of nutrients and vitamins, while the couscous provide the carbs to help fuel our bodies.

Ingredients:

4 Chicken breasts

2 garlic cloves, crushed
1 red chilli, sliced (keep seeds for hotter taste)
Paprika and cumin (approx 1/2 teaspoon)
Juice of half a lemon
100g couscous
100g canned chick peas
100g canned apricots (use fresh if available)

Simply mix the garlic, chilli, spices and lemon juice to make a marinade. Slash the chicken breasts diagonally and rub the lemon spice mix in, and leave for at least 20 minutes.

To cook, grill for about 15 minutes, turning once. Check the chicken in cooked al lthe way through by piercing with a knife -if the juices are clear, then it is cooked.

Cook the couscous according to instructions on the packet, then add the chick peas and apricots, and serve with the chicken.

If you plan to eat a lot of couscous, invest in a couscous pan which helps to keep the couscous held together, and cooked evenly throughout.
